About 10 years ago, the very big FOSS vs. Proprietary battle was between Linux and Microsoft. This is both made possible by open source software, and is completely proprietary. The Desktop.

On the open source side, the projects that stand out are GIMP (a Photoshop replacement) and Inkscape (a vector graphics program – like Illustrator). There has been a lot of back and forth about the GIMP user interface. The other realm of stuff that I know some about is video. It plays everything.
